Pollo Tropical is seeking a motivated and experienced Assistant Manager to support operations in our Fort Myers and Naples, FL locations. Duties and Responsibilities

Supervise restaurant team members and oversee daily operations during shifts.

Manage employee scheduling to maintain adequate staffing and coverage.

Deliver exceptional customer service and resolve guest concerns with professionalism.

Monitor food quality, sanitation, and cleanliness standards.

Oversee inventory control and ensure accurate ordering and stock rotation.

Support cost control by managing labor, food, and operational expenses effectively.

Execute administrative tasks, including payroll processing, employee hiring, onboarding, and discipline procedures.

Assist in training and mentoring team members to drive performance and growth.

Ensure compliance with health and safety regulations and company policies.

Use basic computer applications, including Excel, to complete reporting and scheduling tasks.
Qualifications

Minimum of 2 years of experience in a restaurant environment (required for external candidates).

High School Diploma or equivalent required; Associate’s degree in Business Administration or Hospitality preferred.

Strong leadership and supervisory skills with the ability to motivate and guide a diverse team.

Excellent customer service and conflict resolution abilities.

Familiarity with payroll, scheduling, hiring processes, and restaurant disciplinary procedures.

Understanding of cost control practices and restaurant operations.

Experience in inventory tracking and management.

Basic computer skills, with proficiency in Excel preferred.

Strong communication, organization, and time management skills.
